Fall Floral Wrap Dress

Happy Saturday! I hope everyone is enjoying their weekend! I have my cousins bridal Shower this evening and this is what I will be rocking:)

I am loving all the florals for this upcoming fall. This print is suitable, with the burgundy and pop of blue it’s just fun. I am always trying to find something that is flattering yet comfortable, and this is perfect because it is adjustable. I found this fabulous dress at Jewels in Corpus Christi. They always have new pieces coming in, follow them on Facebook.

These wedges I got on sale at Dillards for only $35! They are Gianna Bini and pair perfectly for this outfit.

My earrings are Baublebar for under $45. They are a great statement piece for fall. If you haven’t checked out Baublebar, you are missing out. They have so many pieces to choose from that vary in style.

For those still feeling the affect of Hurricane Harvey I hope the days are getting easier. I am glad to see everyone that has come together and helped those in need. For those waiting of the arrival of Hurricane Irma I am praying for everyones safety. To all my Florida friends and my Fiances Family we love y’all and stay safe!

Low carb Italian Dish

Happy Thursday! While this past week has been anything but normal I decided to cook my fiance and I one our favorite low carb dishes. This is a good hearty comforting food without all the carbs:) And you can never go wrong with a good italian dish! Hope y’all enjoy! Comment below if you cook it!

Zucchini Lasagna

  • 2 lb 93% lean Turkey Meat
  • 1 1/2 teaspoons kosher salt
  • 1 tsp olive oil
  • 1/2 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz can) crushed tomatoes
  • 2 tbsp chopped fresh basil
  • black pepper, to taste
  • 3 medium (8 ounces each) zucchini, thinly sliced
  • 2 cups cups part-skim ricotta
  • 1/4 cup Parmesan
  • 1 large egg (I use fresh eggs) *Perks of having chickens in your backyard:)
  • 16 oz (4 cups) shredded part-skim mozzarella cheese ( since you can

  1. In a medium sauce pan, brown meat and season with salt. Drain excess water/fat. Then, add olive oil to the pan and saute garlic and onions about 2 minutes.
  2. Add pushed tomatoes and stir well.
  3.  Simmer on low for at least 30-40minutes, covered. The sauce should be thick.
  4. Meanwhile, slice zucchini into thin slices, add lightly salt and set aside or 10 minutes. Zucchini has a lot of water when cooked, salting it takes out a lot of moisture. After 10 minutes, blot excess moisture with a paper towel.
  5. Preheat a gas grill (I use a George Foreman) to medium high, and grill 2 to 3 minutes per side, until slightly browned. Place on paper towels to soak any excess moisture.
  6. Preheat oven to 375°.
  7. In a medium bowl mix ricotta cheese, parmesan cheese and egg.
  8. In a 9×12 casserole spread 1/2 cup of sauce on the bottom and layer the zucchini to cover. Spread 1/2 cup of the ricotta cheese mixture, then top with 1 cup of the mozzarella cheese and repeat the process until all your ingredients are used up. The last layer top with remaining zucchini and sauce, cover with foil and bake 30 minutes. Uncover the foil and bake 20 minutes (to dry up the sauce) then place the remaining 1 cup mozzarella and bake until melted, 10 minutes. ( if you like your cheese little crispy on top. Broil for the last 1-2 minutes.) My fiancé and I love a crispy top cheese layer.
  9. Let stand about 5 – 10 minutes before serving.

Brown the turkey meat

I like turkey meat because its leaner. You will see in my recipes to come, I mainly cook with turkey meat:)

Here is the meat sauce, make sure to let it simmer for 30 minutes.

Make sure to salt the zucchini and let it sit. This really helps with the final product to not be as watery. Zucchini holds a lot of water and this will help a lot.

Even after I grill them on the George Forman I like to get a paper towel and get the remaining excess water.

This is the final product. If you do not like a crispy top layer, just don’t broil it. (My fiancé and I love it like this) * No its not burnt lol

Nicely paired with a glass of Rodney Strong Cab:)

Texas Strong after Hurricane Harvey

What a crazy week? If you have been on any social media or news lately you have seen that Texas was hit very hard by Hurricane Harvey. While, My family and I are very fortunate to not have had any damage, our surrounding areas were not. The devastation is completely sickening.

While driving around the Rockport, Tx area 2 days after tragedy hit there were people coming to their destroyed homes to salvage what they could. Seeing this was a big eye opener to me. That no matter what your plans are for your life that anything can be take at any given second. These people did not plan for this and weren’t prepared for everything to be taken. To see that people lost EVERYTHING. Their homes, businesses, animals, food etc. Their life is turned upside down. But then there was a lady that came to get food for her family at our station. I was in complete sadness when she said she lost everything. Then I heard her say “We will overcome this and com back STRONGER.” To hear that come from someone that lost everything, really made me stop and think

Texans are proud to live in the state we live in. We WILL overcome this TOGETHER. No matter if you were not affected by this your state was. Here is the time to come together and to come back stronger than ever. If you were affected by Hurricane Harvey then we are here for you! IN GOD WE TRUST!!!

Fall Attire in South Texas

Fall will be here before you know it. While living in South Texas the fall and winter months are not has chilly so here are a couple great outfits to kick off the season.

My Fav: Sweater & Ripped Jeans

First is my favorite! Ripped jeans are a must have for this coming fall. They pair so nicely with a sweater and booties. ripped jeans will be my go to all fall long.

  • The tie sleeve back open sweater that is featured is from Express and I have got tons of complements! Its not very heavy and breezy. The rust color is so gorgeous, I can’t wait to wear it for the chilly weather.

  • These ripped jeans fit like a glove! If you are anything like me,  I like a little more higher wasted waist and they are so comfortable

Second Outfit: Printed blouse

  • This peacock print blouse has to be one of my favorites right now from Express. Has those perfect light fall colors that pairs great with a darker jean and booties. These blouses are buy 1 get the other 50% off! Theres alot of different colors too!

  • The jeans are also Express that stretch a little and give. I am all about comfort and style and these do the job.

  • This chocker necklace is part of a layering piece from The Loft. It is on sale right now click here for link. It was originally $39.50 but now $29.99!

Third outfit: Bright pattern

  • Since I am very fair in skin color, pops of color are usually my go to. This one is very vibrant and perfect shades.

  • The earrings and long tassel necklace are amazing statement pieces. That cobalt blue just pops with so many outfits. Its a must have set! Click here for earrings and click here for necklace. They also come in a lot of other colors.

Hope y’all enjoyed my first fall attire post!
